I think I'm going to use my 5 gal Muntons Bock malt that I got about 1.5 years ago. I was planning on doing just a regular bock and maybe a chocolate bock (using cocoa powder at flameout), but am open to ideas that involve using the 5 gal can split between 2 kegs using a pound of other malt for each keg (instead of sugar( have dark, amber and light malt to choose from)).
FYI, I've moved twice since getting it so it and a bunch of the old MB cans need to get used so I'm brewing practically non-stop now in 2 kegs.

Lots of folks split the five gallon extracts into two batches.
Be advised that you may have some off flavors (soapy) and color issues when using old malt extracts. If it came with a pack of yeast you may want to replace it with a new/fresh package.
