What is the shelf life of one step.

If you didn't make it into a batch, it has no shelf life. You can buy it and store it in tubs for years.
If you make a batch, it can keep for one week in an airtight container, in the frig, then let it warm up before using it.

I was told one week by the Customer Service Manager of LD Carlson, so that's what I go on. Although I'm now using Star San. right after buying another container of Easy Clean / One Step.
