Got the Big Honkin Stout done.....Still working with getting my water and boil off accurate. Now it's not nearly as humid I added a bit more water and thought I had too much so I boiled 15 minutes before the 60 minute addition and by the time I finished, instead of 1.075, I was at 1.081 so I added less than a 1/2 gallon of bottled water to get me back up and to 1.075.
Pitched at 66 with the yeast starter at 71 so close enough.
The twin helped me and that makes down time less boring and things work just that much better.
3 weekends in a row brewing (2 for me) so I guess I'm good for awhile but how can I not take advantage of this fantastic weather in our area.
The refractometer was still lower than the hyrdrometer by about the same amount, .005.

Big stout fan here. Only two on hand here, usually have 3. Hope it turns out well.
It's been really breezy here this weekend and last. I try not to brew when it's this windy... Which reminds me, I've got to get a brew together soon...

Even though my keg of stout is still conditioning and will be for a few more weeks, I tried a bottle tonite, almost 6 weeks in the bottle and I'm very pleased. Nice, big, heavy stout....almost an imperial flavor. Nice chocolate notes, just what an American Stout should be in my opinion. Not much head though it's carbed nice.
This one is one to really savor each sip and enjoy.

I'm fermenting the second attempt at the 'NillaMilk Stout now. I'll be making a tincture of vodka with the vanilla bean next week and putting that into the secondary for the final leg of the process. I'm hoping this one turns out, without the gushing.

After that, I'm going to use the same base recipe for an oatmeal stout, because, believe it or not, in talking with my brother, I came up with a great name and label idea for an oatmeal stout, and I just couldn't resist doing it, even though I'm not much of a stout enthusiast.

Fortunately, stouts will keep for a really long time, so even if I brew it in spring, I know I'll be enjoying it well into winter.
