A saison using wheat + cabernet must + a little bit of Nelson Sauvin hops as a flavor/aroma addition is in my future plans.

Ok, I just filled up my fermenation chamber with another Saison. This one has a can of raspberry lemonade thrown in.

1 lb Amber DME
3 lbs UltraPale LME
1 can frozen Raspberry Lemonade concentrate
1 oz Saaz (Czech 2.9%) 30 minutes 19.8 IBU est.
2 tsp food grade urea (yeast energizer)
1 belle saison yeast re-hydrated
1/2 Whirlfloc 10 min boil.

Beersmith said est. OG of 1.075, measured 1.076 close enuff for me.

Now I got to start bottling the first batches I put in my fermentation chamber. Got 10 more belle saison yeast coming. So with my 50 lb DME and the chamber set to 75F I may just keep on going. :jumpy:

I think the next time I bottle I am going to try to wash some of the belle saison yeast. Anyone ever do it with that yeast?

Oh never though of going dark with the grapes. hm.....

Is that a little king charles in your avatar? My daughter's looked just like that with the little antlers. He wore them all day Christmas, it was so cute.

Yeah that's a cavalier king charles that I was fostering, he's not here anymore for now. Up next... border collies, springers, jack russel, berner sennenhund (bernese mountain dog), and smushy faced little black furball of some sort. And then cavalier again. Some overlap there, I'll have 5-6 dogs at some points counting my own. This is one of my dogs (an old time American farm collie, AKA "English Shepherd", IE see http://www.nesr.info/ ) wearing them:

OK I bottled the first 2 batches of this.

Fermentation chamber temp was held at 75F, all fermented for 21 days.

Simple Saison 2a: OG 1.082 FG 1.006 10.1% Whoops! man that yeast eats sugar!

Simple Saison 2b: OG 1.060 FG 1.000 7.9%

I am starting to think that 4 lbs of malt is too much. Also I left the hops in after the boil to sort of dry hop, but way too messy and too much junk in the bottles. Not doing that anymore.

haerbob3 likes to make crazy strong beers, but honestly most of my saisons are brewed in the low 1.05s. They still come out 6%+ abv because of the level of attenuation. That's plenty strong for me for a beer that I want to drink often. To me saisons are not quads, I like to drink them as "everyday beer".

That seems like a good place to shoot for with this yeast. I'll have to mess around in BS2 and adjust the malt etc to try to hit 1.055. These beers did taste great out of the gravity sample tube although with too much hop particles. But you're so right, that 10% one, I'll maybe be able to drink one glass and stumble up to bed. I am old. :razz:

Just in case anyone is still following this, I just ran the simple saison through BS2 and with 3 lbs of malt and 4 oz of honey it estimates OG right at 1.055. So that looks like my go forward base recipe adjustment.

What the heck am I going to do with 72L of high gravity saison? Oh well, it's a tough job but I guess someone has to drink it. Might take me till summer to get though them haha.

Those beers will probably age well for a year, 18 months, 2 years even. So, take yer time.

Ok bottled up another batch. This one is all barley malt (4lbs) and just hallertau hops, so I guess a single malt and single hop SMaSH. Very clear when I bottled it, and the sample tasted good, however as always with this whole series so far, too much malt, OG 1.072 and with the Belle Saison dry yeast, FG 1.006 or 8.7% ABV. Tomorrow I hope to bottle the black Saison. That was an OG of 1.090, so we'll see.

Whoa!. Important safety tip. Thanks BB. Another reason to take the dang hop bag out.

And to the other comments:

1) Yes well with the way these are turning into alcohol bombs, I am pretty much assured a fun time. :)

2) #*$& will be summarily kicked in about a month (or more) :)
