I was able to use the force of Google's cache system to retrieve this recipe that is deliciously dark and sweet. It involves a pseudo-decoction to promote caramelization which will add sweetness, and lend some plum/raisin flavors.

Did a Partial Mash of the Munich and Chocolate wheat in my small pot (12Q) BIAB style. I wanted to keep boil volume low so I *would* get some caramelization of the wort.

Since that wasn't a decoction mash to make all sorts of yummy dark caramelized goodness, I poured out about 1/8th of the mash into a separate pot and let it go for 30 minutes before I turned on my main pot. The idea here was to basically give me crystal and special b like flavors without having used any. The kind of thing you'd get in a decoction.

Added the Tettnanger to the main boil @30.

Meanwhile I let the small pot go until it got thick and syrupy, darkened, and started to have nice raisin and caramel flavors, then turned off the flame and added it into the main boil.

Added the Mr. Beer / Coopers Bavarian Weissbier @flameout.

Cooled it, added it to LBK and topped up to 2.4 gallons.

Sample said 1.067. Which is just dandy.

Pitched Wyeast 3068 - Weihenstephan Weizen

SRM? Who knows. Eyeballing it, more then 20.

Hopefully it turns out good. Can't see any reason why it would not.

FWIW, this would be really easy recipe to get rid of that HME and do full PM+DME+Hop boil or turn into an AG version. EDIT: this is one of those recipes where I used the HME I won as a reward and went Frankenstein on it. I'd normally have just used some wheat dme and more hops, or just BIAB'd the whole thing.

mashani, would you post your AG or PM version? Doing a real decoction mash with AG would be something I'd like to cross of my brewing bucket list.
