Just 1 dry hop. Thats why I'm asking, is it ready to keg? I know about the 21 days, but do I want it to go any lower? The sample tastes like grapefruit beer

Was your OG about 1.062-1.065? If so, dry hop for a few days and keg. I doubt it will go much lower anyway. While I like to go 3 weeks or so, 1 week is too early to keg IMO. Dry hop for another week then keg. Then I'd let the keg sit a week before gassing it.
That said, I'm working on recipes for grain to glass in 3 weeks.

Yes OG was 1.064. I will throw the hops in now.. So for a few days, or 7? I've never dry hopped so I just want to learn proper.

With your higher mash temperature, I don't think the FG is going any longer.
As for the dry hop, well that's as diverse as the folks here. Some go 7 days, some 10 some 14 and others for just 48 hours. All with good results. I tend to go 3-7 on single dry hop, depending on schedule and have not been able to tell any difference. At least not with my nose/palette combo.
