RCE rolling along!

Post by FedoraDave »

Foothiller and I have been corresponding about our RCE. We've nailed down that we're going to do a Strong Scottish Ale, which I've never done before, so I'm intrigued and excited to try making this style.

I like the malt bill he outlined, and had one or two suggestions, and we're getting ready to nail down our yeast. I hope my LHBS carries it, although I know I can order it online, if they don't.

I think in a couple of weeks, we'll be ready to brew! This should be a nice one!

Looking forward to seeing the future posts on this one Dave as I've seen many Scotch Ale mentions on the forum but have yet to add one to our list of to do's.

Hope you two enjoy this RCE adventure.

myhorselikesbeer and I have a recipe which I hope to do week after next. We've scheduled a phone conversation tomorrow night to go over things and to meet.
Gonna do a semi-hoppy pale ale of a recipe he put together. It should be good and is already fun.

Rayyankee and I are planning an American Wheat, BIAB style. This will be my first all-grain wheat beer, so I'm pumped. :jumpy:
I used to be indecisive, but now I'm not so sure.

haerbob and I have decided on a dunkelweizen, as he hasn't worked much with wheat before, and i'm a huge wheat fan. very excited about this one, and also excited for the possibility of also doing a berliner weiss so I can teach him about sour mashing :)

I've been enjoying working with Dave on this. After discussing yeasts, we agreed on that last night, and I was glad to find the Wyeast Scottish Ale yeast at one of my LHBS tonight, after finding the Kent Goldings hops there earlier in the week. I know I can find the grains at one that's even closer (but not as well-stocked) when it's time to mill the grains. Although I'm still checking my references after a business trip this week, I updated what I had in QBrew and sent it to Dave to see if we do have final agreement on the recipe. When we do, we can post what we're planning.

JimH and I are also working on an American Pale Ale. I love the RCE concept.

I too am anxiously waiting to see the results of this beer, Dave. Every year my favorite local brewery comes out with a new beer that they - usually - only run for a few months and then it's gone forever. Two years ago they did a Scottish strong ale and I LOVED it. (Since then their offerings, IMHO, have sucked.) I would love to see what some one such as yourself that knows what he's talking about comes up with for a recipe for this beer.
Things men have made with wakened hands, and put soft life into
Are awake through years with transferred touch and go on glowing
For long years.
And for this reason some old things are lovely
Warm still with the life of forgotten men who made them.

Chuck, it's mostly Foothiller's recipe (of course, he knows what he's doing, too). I made one or two suggestions on additions/changes to the malt bill, and we sort of fell into the same opinion of the preferred yeast each on our own (although using a Scottish Ale yeast strain is sort of a no-brainer, as opposed to, say, a Czech Lager yeast!). So I can't take much credit if/when this turns out to be a nice beer. I anticipate it becoming one of my standards, though. Just a feeling I've got.
