At 7PM my blow off bucket is gurgling.

Wheat I pitched late yesterday took 22 to show any signs of fermentation
after 25 hours the airlock is going nuts
Didn't use blowoff cause I had PLENTY of headroom
Now Im not so sure
may have to switch it out

Notty got going for me in about 6 hours the other day too. Pretty much been that way every time I've used Notty this winter even though my temps are <60. I love Notty. I am pitching full packs into 2.5 gallons, so my pitch rate is pretty high.

Pitched a packet of US-05 and packet of MB that comes with their craft HME's in a 4 gallon batch at 1 yesterday, midnite nothing yet, perved it at 8 this morning, yeast got real hungry whilst I slept!

The Notty I pitched in my Rye took off in 4-5 hours. As long as I pitch 60 - 75* it's always a quick starter. A big reason I love it.

I pretty much have the same experience with every dry yeast I use. But I pitch everything at 60F and have a LOT of oxygen in my wort from pouring through a strainer into two buckets then dumping the buckets into my conical. One thing I found I have to watch with notty is that it tends to really heat up during fermentation. I've found the same thing, temp rise. If I pitch as high as 70*, I only do if in a hurry. I found a corner of my basement which is 5-7* cooler due to poor airflow, so I keep there until it's time to warm up a few degrees. It helps, at least in my mind. My fermentation temps usually stay 64* there. I'm not sure if different grains matter, but I've had to rest an ice bag next to it one time to lower temps...

Last time I used it, my conical is in my basement which stays 66F all the time, my fermentation heated up to 75F. By some miracle the beer came out clean tasting though. My S04 never heats up more than 2 degrees regardless of how vigorous the fermentation.

That's a big rise. I don't think I've ever had that much. You'd think the metal conical would be better at disapating heat too.

yeah when I use notty it really gives my fermentation chamber a work out. I use the active fermenter to control the temp in the chamber I have it set for 18.5c ± .5c. when using notty I get 4 days of my chamber cooling down every 25-30 min.. I use 05 or 06 it's usually a couple hours between start ups.

My current beer just hit 72F. So S04 is doing a hot fermentation this time. Probably because it is a 1.082 beer. I just put a fan on it to try to bring it back down or at least keep it from rising more. I am hoping it is not too late.

Hopefully it goes down, not up. 72 is just over recommended, I wouldn't worry...
