Hey, it's Lundi Gras (duh, google it) and for March 3rd, it should be in the upper 60's not mid 40s but whatever, it's a brew day. 2nd brew in 2 today. Today the twin helped me brew my RCE.
I think coming back from his place yesterday I was a bit too imbibed and whilst mashing in I couldn't remember milling the pound of C10 so I added another pound just in case. While I don't think I added 10 in yesterday, I added a pound of something. :blink:
Anyhoo, it came out great. 1.061 instead of 1.058 but who cares.
I used Cascade with the 5 minute addition of Mosaic that I've not tried before and Ed is brewing today as well (in 10 degree weather) is using Cascade and Centennial. He's using 05 and I'm using 001 so we'll get to see some subtle differences and how they play on the malt bill.
It was a good day for brewing even chilly and windy but it's done.
Here's the recipe for those who follow such things: Oh and even though Ed's doing a BIAB, he's doing a step mash so that should add another character to the play. I also mashed at 150 and he's doing 152. Who can pass up an RCE? You're missing the fun!

Third try to get this posted... keeps resetting when I hit submit. It was a cold brew day 10 degrees...my cow pie porter was freezing while waiting for the boil...15 min. Brew went well and hit my numbers..1.054 OG, but I had only 8 lb of two row in mine??? The smell of the extra hops in the boil was fantastic, I can't wait to taste when I move it over to secondary for dry hopping. It has been great talking with Paul and being able to put a voice to the face/name. This is a great way to get to know each other a little better. Thanks again Dave for the pairings.

Paul, I thought this was an APA? did the crystal move ot into the Amber style or our numbers? just curious. I think this is going to be a really good brew.

First, I made mine 5.5 gallons so my numbers are a bit skewed from yours but yes, this is sort of a hybrid I guess.
I think but am not positive, that most guides show 1.056 as the bottom of an IPA with IBU's from 40-70. They also show Pale Ales from 1.040-1.060 so there is some overlapping. If that is correct, then mine is really the low end of an IPA though I tried to make it a hoppy APA. I usually overshoot my OG because so even when I shoot for a number, I usually don't water it down to get closer to the style. Plus, my Refractomer showed 1.058 but since I use the hydrometer for the final reading, I also take a hydrometer measurement and use that for the OG (sorry, don't mean to be trouble).

So, bottom line, we're good! :lol:

10 degrees and you brewed. You are a rebel my friend. And I thought the folks that stood outside yesterday to watch the Mardi Gras parades in 36 degrees and pouring rain were rebels. You are truly dedicated.

Kegged this tonite. Nice aroma and color. Ended up exactly where it was supposed to at 1.012, 6.3% though I 'm still having trouble getting my beers to stay below 6.
Can't wait to swap beers and see how they compare and differ. Really enjoyed this RCE and I look forward to the next one.

Beer-lord I sampled the collaboration you did with myhorselikesbeer. It really was interesting how the different hops used changed the aroma and taste. Yours had a piney taste while myhorselikesbeer had a citrus taste.

Very good brew overall. This fresh 21 year old approves! :fedora: :clink:

21 year old approved! Now that's a great endorsement.
I think the yeast likely made a bigger difference than the hops but I've not tried Ed's beer yet but hope to this weekend if I can find Beer-lord time.

Just did a side by side and really like both. Here's my take....I definitely taste the 007 yeast in mine (earlier I said 001 but it's 007) I think it's a bit too much for a pale. That said, I'm glad we did a few different things. Ed's has better aroma, mine better lacing. The color was dead on the same! Can't even see any differences at all.
The mosaic was new to me but it's hard to notice all of it due to the yeast variance. I wonder if I used 05, what I'd rwally notice.

In the end, I give the nod to Ed as I think his is more to style. I don't notice it until I tasted his but after sipping his then sipping mine, mine almost has a very slight extract twang being all grain, I think the yeast is giving off some breadlines that may be doing this.

Great job Ed! Gonna try the second bottle in a few more weeks.

Thanks Paul, it was cool that the beers looked identical. Let me know how the second tasting comparison comes out. This was a lot of fun and I will be trying some more Pale Ales as I can now begin to appreciate the hops more.

Long time ago but I actually still have a tiny bit of this left in the keg. Friends are gone and I just don't drink that much beer and since I have 3 on tap, I usually gravitate to the hoppy side but..............this beer is awesome!
Still has great aroma,clean taste and I actually think it would be judged very well. It's like a SNPA but zingier and tastier. Just hoppy enough for a hop head and now that I look over the recipe, pretty much as we designed it to be. And, wife and son approved!
OK, I did just cut the grass for 75 minutes in 93 degree temps with a feel like temp of 104 so cold piss would prolly taste good but I am pretty much blown away and I have to make this one again. Can't wait to do the all Mosaic this Sunday if it's this enjoyable.
Ed, you got any left?

Long time no post. No mine is long gone. Funny how everybody said they don't like hoppy beers, but this was the first one they grabbed. I will be doing this one again for sure. Did you ever get to try the wine?

Yes, I thought for sure I sent you an email on the wine long ago but, did you say that was your first time making wine? it was amazingly good and I'm not a wine drinker. My wife drank most of it. :)
I sort of promised her that one day I'll make some wine for her so it's something I might have to start looking into soon.

By the way, I saved just enough of this RCE brew for my first homebrew meeting tonite. I have just about enough to fill the growler and I've left that tap alone so I would have enough for tonite. Hopefully I'll get some honest responses on it. I'll also make this one again.
