dms formation?
if you cover boiling wort with a mesh screen.... do you still risk dms ? would it condensate on the screen and drop back into the wort? or would it escape through the mesh with the steam?

cool...once I get a burner and a gas line hookup i'll be brewing outdoors and need to screen the top of the kettle due to tons of tree junk.. flowering dogwood or cottonwood. also mozzies and other bugs.

My pot is so wide I would have to have a BIG mesh screen. I have boiled all kinds of things due to whatever is falling down that day, leaves, bugs, etc. They add character to the beer
