Mine had a big load of crud too, and I did a good job keeping a lot out of the fermentor to begin with.

The Jury is still out Ron. We'll see how good we did in a couple of weeks.

Honestly Ron, I think it was the GigaYeast. I've read how much it blows up. Though I filled my bucket a bit too high, the krausen blew thru the seal of my new SS bucket! I had 1/2 of funk on the inside, top lid.

Now I have nothing fermenting at all and it might be 2 weeks before I can brew again though I'm shooting for next Sunday. Can you say Dr. Hoptagon clone? Sure you can Ron.

Started my cold crash earlier in the week, at 1.007 figured it's pretty much done. Kegged it today with 2oz Apollo, 1.65oz Simcoe (don't ask, that's what was lying around) and 1oz of Chinook.
Centennial was in 2oz vacuum packed bags and didn't want to open it, plus I like piney. Put it in my dry hopper and into the keg, into the keezer and on the gas. Taste was really nice with hop bite on the back side. Can't wait for this to carb up.

Sounds great Jeff. Each one of us has done this recipe slightly different than the other. I hope you guys took good notes in case one of yours is better than mine and I need to brew it again with your recipe.

I got my keg in the kegerator today and will hook it to gas tomorrow. I'm gonna go low and slow for 7 days I think.
I love Chinook, mostly as FWH or bittering. I don't use it much as a dry hop but I love what it brings to IPA's.

Jeff, I just that dry hopper in the fermenter when I did my second dry hop. It works better than bags. Might have to get me another one of those soon.

Chris, I know I'll come in third place. :lol:

Ron will be the third party tie breaker judge. The winner gets to host the other two at their home and brew with them. :jumpy:

Paul, I have already gotten another one. Got the longer 18 inch one in case I want to dry hop with whole leaf.

So, I had to clean my tap (I think the middle tap is getting stripped) and I've only had this on gas for 2 full days but of course, I just a had to. Had to what you say? Take a sip. The aroma is off the charts on this one. The color is purdy, purdy. It's got a bite but it's not overly bitter, much more flavorful. It reminds me of a beer I made about 2 years ago when I used 1 pound of hops but it was a bit to bitter. Too much at 60 and 45 minutes. But I've always said I'd make it again without the 45 minute addition. Not anymore, this one is much better.

The only thing is (and it's very early and not very carbed) I dont' get any Maris Otter in this. I was hoping for a slight bready tinge to it but maybe that will come after it balances out a bit.
Chris, a big props to you for this recipe. I can't see how this can get any better but I know it will be in a few weeks.

Glad to hear the first official taste is good. Paul, as you know, I'm a big fan of MO. And add it to a lot of my pale ales and IPA's. I really don't think you'll get much of the bready taste out of it. MO is funny, I think it lends just enough malt balance to the recipe. Kind of like you don't really taste it when it's in there, but brew one without it and you'll really know it's missing. If that makes sense??? I can't wait to open one of mine up. I still have to wait another week and a half before mine are ready.

Same here, I use MO to help balance hoppy beers or good body in a Porter or Stout. I have a Simcoe IPA and IIPA than uses all MO and Simcoe hops.

Glad to here the first taste sip hasn't killed anyone yet. But how many hops would it take to even hurt Paul. I mean, like a pallet full would have to fall on him...........right? :lol:

When it warmed up, I could feel a bit of the alcohol heat. But no fusels. :jumpy: At close to 8.75%, I'm not surprised.
And Chris, your explanation makes perfect sense. You never miss something until its gone, right?

Nah, you are so yesterday. I think you only showed up now because you could smell the hops when I took my taste test. The area around my kegerator smells like hops!
