Tomorrow I'm going to give a try to a clone of Dr. Hoptagon. Yes, it's warm and getting warmer but I still enjoy my dark, hoppy beers in doors where it's cool. And, I'm curious what my wife can do with the grain to make a nice, roasty bread.
I'm still kind of guessing with the breakdown of malts other then the brewmaster telling me there's 20% specialty and "large amounts of roasted barley" but with the help of Chris months ago, locking in the breweries recipe, here's what I'm doing (with a silly play on the name, of course):

That's right Paul, you show Ron how to use HOPS!!!!! :p

Just curious, your boil off is only 3/4 of a gallon. Mine runs between 1 to 1.5.
And batch size is the same as bottling? No loss to trub.

Jeff, I left that setting alone in Beermsith since nothing I did seemed to work out just right. I now use another online boil off program that seems to work better with my equipment. http://www.copycalc.com/bob/BIAB%20Fixed%20Boil%20Off
Depending on the time of year, I use 1.3 gallons per hour. Less when it's very humid.

This is done! Overshot the water a bit so I only came in at 1.073 instead of 1.075 but who cares? Not really sure what to think at this point. Definitely roasty, bitter and dark. I'm not expecting Dr. Hoptagon but I'm expecting this to be chewy.

Chewy isn't necessarily a bad thing on a beer like this. Too bad Ron won't like it.

Yea, I'm pretty upset Ron won't like it. Guess I'll just have to drink his share.
Spent the rest of the afternoon drinking. Man, I'm ready for bed and it's only 7 pm!

Ron, you really hit below the beer-belly! :)
Actually, it was an water issue.....as in too much. So, technically, with an OCD microscope, I was proportionally on target. :cool: See where I'm going here?
Seriously, I think the BIAB water calculator I've been using, which has worked very well the last 6-8 beers, was the culprit. Well, meaning, I kept the numbers I was using in the winter when it was drier and the difference between 35% humidity and 85% humidity can be nearly 1/2 gallons difference when you add in 9.3 gallons of water. Lesson learned and no harm, no foul.

Finally, I'm not real sure how close this will be and have a gut feeling it won't be close at all. Not saying it would be delish, just that it seems to be a different beer but I could be very wrong. After years of marriage, you just get used to being wrong all the time to the point it feels right. Get it?
