This came out pretty good. Smells of straw and hay. Spice and orange flavors are subdued. Finishes clean and dry. This was made from a brew demon twisted monk kit with caramel wheat, carapils and crystal10 on a steep plus .5 oz Mt. hood hops @10min.

First pour of a homebrewed Simcoe Pale Ale. Good stuff! Calculated IBUs are at 43, some might call it an IPA, but I don't. Refreshing, with most of the hops added as an aroma addition post boil, at 5.8% ABV. Cheers!

Well I couldn't wait any more. 18 days conditioning is a little early but I was dying to try this as it was my first A.G. brew. I was really nervous to try this, as I have been a little disappointed with a few of my latest extract brews. Well let me say I am greatly relieved that this beer is ...EXCELLENT! As soon as I opened it I was greeted by a wonderful floral hop aroma. On pouring I was happy to see that the color is much lighter than I have been getting with extracts. A nice golden blonde. The first taste was a huge relief. A really nice hop forward taste with just the right amount of bitterness. No off flavors at all! The hops are really focused on flavor and aroma, which is how I prefer my IPAs. It finishes nice and clean with a pleasant amount of bitterness and some sweet malt. The head is thin but stays the whole way with a little lacing. The flavor is actually much more complex than I would have expected from a SMaSH. Using Falconer's Flight may have contributed to that. The only thing to find fault with is the clarity, and even that I don't mind as I have had plenty of hazy IPAs.

I am well and truly amazed that I made this. And it is so much more satisfying that I did it all grain. Not to knock extracts, but I was wanting more from my brews and I finally got it. Even though I enjoyed my previous brews, I always knew that there was a lot of room for improvement. No matter how my brewing method improved, there were always some "extract" off flavors. This is the first beer that I've made that I can honestly say that is as good or better than many commercial beers that I've had. Not to belabor a point, but it blows my mind that I made this from scratch. I really feel like this is a major turning point in my brewing. Where as I may have started to loose enthusiasm if things didn't improve, I now have a new excitement to continue getting better.

Brew on Borg brothers and sisters!
