Since you have so much on hand, you should try the Blackstone recipe... almost a SMaSH, and oh, so good. Dave (their founding brewer) gave me this recipe...

I just happen to have all of that except the yeast on hand. That is very close to a 90 Schilling Scottish Ale.

That sounds like a terrific idea :)
Right now I am thinking MO might be a nice base malt for an IPA.

Yeah.. Even with American hops. A Maris Otter Simcoe SMaSH I made some time back was one of my favorite beers ever.
