No bombs yet, popped a bottle last night and whoa....tons of carbonation, even some lacing this early, good sign. Carbonation isn't fully embedded though, needs a bit more time but damned if it doesn't have me excited.
Gonna let it stay warm for another week and then put some in the fridge.
On a side note, it's sooooo sour. It's everything I dreamed it could be in terms of sourness.
It's too thick though for the style, finished at 1.014. Going to brew it again this weekend with a different strain, and I'll make sure to rehydrate the yeast first this time.
C02 seems high for this style, can crown caps handle it?
