Amacitra Saison

I got to brew 2 brews today. First was Saison ;

2.5 gal

2oz carapils, 2oz crystal 10 -20 min steep.
2 Ozs Malto
1. Lbs Amber DME
2. Lbs Wheat DME
1/2 Ozs Amarillo 20 mins
1/2 Ozs Citra 15 mins
1/2 Ozs Amarillo 10 mins
1/2 Ozs Citra 5 mins

Belle Saison yeast.

That is an awesome yeast... Should turn out very tasty with those hops!
Drinking: Columbus Double India Pale Ale
Bottled/Conditioning: Trippel
Fermenting: Columbus Double India Pale Ale, Trippel

Not familiar with the yeast, but Amarillo and Citra are a fantastic hop combo!

You should really enjoy this one!

Came out 5.5% ABV, 30 IBUs on Brewers Friend. Seems too good to be true!

Curious, did you use the whole packet of yeast? I've heard that it is very aggressive. Also, what temp are you fermenting at?

That yeast is probably going to attenuate your beer 97+%. Not the usual 70-80%.

It's freakish. I've never had a beer finish > 1.004 with it no matter how much malt/extract I've used.

I did use the whole packet, I did the same with the last "test" Saison. It is very active too. Im at about 68degrees right that's, probably not quite warm enough for this style, but that is what I get consistently in my basement most of the year.

Its warm enough for Bella to make good beer. Just don't try to use Belgian Saison yeast at that temperature.

Thanks for the tip!

This is my second Saison using belle. I did RCE with JPSherman with Citra hops, wheat DME and it came out great. So this was the second adventure with a Saison. I have another packet of it, but both LBKs are full right now. So it may be about 3 weeks before I get to another one.

Hey All, speaking of Saisons,I bottled my 1st attempt last week. It was 2# Lt DME,1# Wheat DME,and 3/4oz. Citra hopa @ 20,10,and 5 mins. At bottling,the brew had SO many different tastes,that I couldn't pick out any certain ones.It's gonna be a good one I think. Got a month to wait though. It's all good :lol:

Citra brings a lot of different profiles, I get grapefruit and even peach. Then the Saison yeast adds a different dimension all together. I have 4 more bottles left that I don't want to drink, but want to drink too.

My Citra Red Saison was fantastic, I really like Citra with Belle Saison yeast.

The first Saison was all Citra, and wheat DME, and it is great. I am hoping for even more flavors with the amber DME and the Amarillo/Citra combo.

Would you go warmer? I seem to be getting cooler temps in the basement, the weather has been very inconsistent and damp lately. It may have dropped to 60 several times. I threw a towel over the fermentor to try to keep it from dropping any lower.
