hey guys i found this recipe in a book that i have..... its called the everything home brewing book
just wondering what you guys thought of this
5 lbs of wheat dme
1 lb of german pilsner malt
1.5 lbs of german wheat malt
.4oz hallertau 60 mins boil
and for the yeast it gives a different suggestions wyeast 1010 or whitelabs 320 for german style
and wyeast 3056 or white labs 300 for an american style
im thinking of cutting down dme to 4lbs...would this be ok?should i make any adjustment to grain if i do?
and also it gives me a steep and sparge technique for the grains using 170 degree water... soaking for 45mins then rinsing them also with 170 degre water..how efficient is this method?

I would leave the DME where it is...
The steep that you speak of at 45 minutes is more like a single infusion mash and should be held at about 152*F for the 45 minutes and even as long as an hour. 170*F is ok for steeping grains but it is the upper limit, but I prefer not to steep Pilsen so for a few extra minutes and better temperature control, you will get a few gravity points out of it and a better beer.
That will give the malts some time to convert and will keep the beer from being overly starchy or dextrinous.
Hop presence will be bittering only and not very present at all so you might want to add another quarter ounce at T-15 for flavor.
Looks like a good simple wheat though...
Another good yeast suggestion is Wyeast 3058 which will give you a Heffeweizen with clove and banana notes!

yea i was think of adjusting hops for flavor and aroma too.... basicly the base of recipe is was a was concerned about...either way ill run it thru brewers friend before i brew

I steep at 155 to 160. I never go near 170 as that's the upper limit on your temps for steeping.

If I have a lot of grains in the steep, I will heat to 165 or so as the grains cool it down pretty quick... 170 would be the way top end though...
I will say that a couple of times, When I wasn't paying attention and was trying to hold the steep temp... Yup, pow, 170... Er... Maybe 175 (ouch) but no harm done...
