My Java Stout has been fermenting for 2 weeks. The OG was about 1.060. My final gravity is 1.030. I put in a pound of lactose for a 4.5 gallon batch, so I guess that would add a few points to my FG. I used London Ale 1028. Should I bottle it? Or let it go for another 2 weeks? (out of town next weekend.)
Edit: My OG was 1.066, and the recipe called for a FG of 1.024. I used 1 lb of lactose that the recipe called for, but less volume (4.5 gallon instead of 5). The ABV is spot on what the recipe called for. I think it might be done.

Re: Should I bottle it?
I would take another gravity reading again tomorrow. If it's stable, then it's done.

Re: Should I bottle it?
Yeah, every indication I have is it is done. The lactose apparently can make it finish high, but it also has an apparent attenuation of 53%, so way below what is expected of 1028. I have had it at the high end of the temp band for 2 weeks. I might just stir it up and take a gravity reading tomorrow, but unfortunately, if I don't bottle today, I don't think I can get to it for two weeks.

Re: Should I bottle it?
Can you transfer to a secondary? You could go that route and let it go for the additional two weeks. At least you would get it off the yeast cake if it has to go that long.

Re: Should I bottle it?
Would you mind posting your recipe? I'm brewing a Java Stout in the next two weeks.
Mine is an AG kit from MidWest Brewers. It's called the Peace Java Stout. ( or Java Peace Stout )
I'd like to compare recipes.
