ALB's VINEYARD ALE

Post by alb »

At the request of Fedora Dave: Philosopher, Sensei, and All-Around Good Guy. :fedora:

This is a doctored-up HME recipe, perfect for a really quick and easy brew day. Makes 6 gal.

I would love to make an AG version of this, but can't find Munton's grain bill described anywhere. Anchor Brewing used to make something very similar: Humming Ale. Their website describes a SMaSH with 2-row and NS. i think this is better! ;) Next time I might try Nottingham yeast for a little better flocculation. I clarify with Biofine after a cold crash.

1.8kg can Muntons IPA Bitter (Connoisseurs Range)
3 lb Golden Light DME
3 oz. Nelson Sauvin
US-05

Prepare as directed on the can, but don't top up yet.

Hop tea prep: add all the hops to 2qt boiling water and simmer 2 min. Cut off the heat and add 2qt cold water to stop the boil. Strain and add to the wort. Pour 2 more quarts cold water through the hops and add to the fermenter. Now top up to 6 gal and ferment at 68-70F, could go lower but no higher.

Keep the used hops, and after the krausen falls add them to the fermentor in a hops bag for a few days.

FWIW, here is the AG brew that I make with NS that I love:

Batch Size (fermenter): 3.00 gal
Estimated OG: 1.051 SG
Estimated Color: 6.4 SRM
Estimated IBU: 61.0 IBUs
Boil Time: 60 Minutes

Ingredients:
------------
Amt Name Type # %/IBU
5.00 g Gypsum (Calcium Sulfate) (Mash 60.0 mins Water Agent 1 -
3.00 g Epsom Salt (MgSO4) (Mash 60.0 mins) Water Agent 2 -
4 lbs 4.0 oz Pale Malt (2 Row) US (2.0 SRM) Grain 3 81.0 %
8.0 oz Caramel/Crystal Malt - 40L (40.0 SRM) Grain 4 9.5 %
8.0 oz Wheat Malt, Ger (2.0 SRM) Grain 5 9.5 %
0.31 oz Magnum [14.90 %] - Boil 60.0 min Hop 6 27.1 IBUs
0.50 tsp Irish Moss (Boil 10.0 mins) Fining 7 -
0.30 oz Nelson Sauvin [11.70 %] - Boil 10.0 min Hop 8 7.5 IBUs
1.00 Items Servomyces (Boil 10.0 mins) Other 9 -
1.00 oz Nelson Sauvin [11.70 %] - Steep/Whirlpoo Hop 10 26.4 IBUs
1.2 pkg Safale American (DCL/Fermentis #US-05) Yeast 11 -
0.25 oz Nelson Sauvin [12.00 %] - Dry Hop 2.0 Da Hop 12 0.0 IBUs

The 1oz addition was a 30-minute hopstand done at 170.
If you can't/don't want to do a hop-stand, just adjust the recipe to get the same IBUs from a 15-minute addition.

Drinking one right now :D
