CSB Entry: Hoppy Belgian
The beer I submitted for the CSB. A pretty basic recipe for this hi-grav. I buried the rest of my ill-gotten purchase of PoR in this batch, and it's not at all noticeable here. If I had it to do over again, I would have used a darker candi just to get some raisin, but it's pretty good as it is. I love the Hi-Grav Trappist yeast. It gives a great character to the beer.

Westmalle yeast is my favorite yeast on the planet when I want to make anything Belgian. There are so many flavors you can coax out of it by playing with the temperature, and it really never makes bad beer no matter how you abuse it.

Yeah, and my brewing adventures have me muddling around in French and German brews so far this year...
So much so that I haven't used this yeast once yet this year! (I usually get three or four in!)

Next Belgian is using Shelde yeast but the one after that has got to be Westmalle!

Well, finished in the "sweet 16." I'm good with that. Also, knocked out by a friend (who, ironically, I met at CSB to turn in beers with). Fun times. I found four more bottles of this, so I had one tonight. I'm pretty happy with this one. Finished in the top 128 last year, and in the top 16 this year. Will have to try to better my position next year.
