Made up a few of cases of Riesling last nite so that is burping away. Just got my tank back from the certification lab so brewing up a Centennial Blonde this weekend to get that on gas quickly. Goona have to be an easy peasy extract tho as dont have time for AG. Hoped to have the Clutter Buster on gas but didnt hear back from them until the day after bottling on Wednesday. Oh well.

Man I forgot,till I saw this thread, I got to get my American wheat bottled so I can brew tomorrow.

Brewing a lemon lime hefeweizen tomorrow, the popular one from the hbt forum that's been around for awhile. Should be a good summer time sipper.

No I got unexpectedly sidetracked Thursday (my usual bottling day) and you know how easily we old farts slip into our little senior moments...
Currently in the middle of the mash for another wheat. As a matter of fact I'll need to start heating my splarge water in about 5 min.

I'm thrilled to say I just started my third "low gluten" batch after a painfully long layoff. I'm so excited about being (mostly) able to freely enjoy drinking beer again, assuming the Clarity Ferm really does what they say it does. Haven't even put any to the test yet, since none is ready to drink yet. But my embryonic new pipeline now has a Canadian Red Light, a Mellow Porter and a Prince Ludwig in the works, with many more to follow soon. I'm trying to start a new batch every other weekend. I have a crap load of backed up inventory to work through. Picked up a ton of extracts on sale with the full intention of starting a batch every week for 6 to 12 months. Then came Celiac and Gout. Hopefully the slower schedule will be easier to maintain. And I'll have to give away a lot of the beer to family and coworkers, since I can't drink as fast as I used to. But I always did like making it even more than drinking it. And I liked drinking it a whole lot. If Clarity Ferm tames the gluten and Allopurinal tames the gout, I may still be able to enjoy drinking it, even if not as much as before.
But it sure feels mighty good to have the wonderful aroma of fermentation in the house again.

Got the Crown Top Pale Ale bottled today. Forty-eight bottles. Well....47 7/8 bottles. The last one was just a touch low, and the interesting thing is, when I took the FG sample on Thursday, I filled the sample tube a little higher than I usually do. I always drink the FG sample, to see how it's coming along. But that little extra I drew off probably would have made the last bottle a perfect 12 ounces.

Tomorrow I'm brewing a fiver of PacTiki Pale Ale. This is a recipe I made recently in a 2.5 gallon batch, just to see what Pacific Jade hops was like. Well, I liked the result so much, I scaled it up to a 5-gallon recipe, and I'm looking forward to enjoying this over the summer.

Thank, Ink. I felt like a new dad with his first child being born when the batches started coming to life again after such a long dead period. Each time I open the cooler to swap ice bottles, the aroma tells me life is getting good again.

Brewed up a third Berliner Weisse last night. Souring entire mash under heat lamp now.

I love these berliners! Only 6 lbs of grains and the brew day is split in half due to the souring process. So this coming saturday I will sparge the mash and then bring it to a boil, throw in hops, cool it down and pitch. Then sunday I can brew up another berliner, theoretically of course lol.
