Too much structure would annoy me. I have spent too much time in corporate meetings to deal with them outside of work.
Just sitting around drinking each others beers would annoy me too.
Something in between more like Foothiller described, I might enjoy, maybe a scheduled demonstration/lesson followed by sharing/sampling/fun.

Yes, that's what I'm looking for. Maybe a challenge to the group to brew a certain style, with tasting and evaluation at a later date. Or every now and then a special guest who would present a new technique or explain a procedure or help with building recipes. Not every meeting, and maybe not even for the whole meeting.
Just something more than sampling each others' beers. It also kind of irked me that a couple of guys showed up at 9:00, when the meeting was announced as having an 8:00 start time. It's like they were just sitting around the house and decided, "What the hell...." That kind of shows a bad attitude.
