A third basic rule is that you just never know. Even after the dozens of beers we've brewed, things can go wrong in one way or another, since yeast is a living thing. No matter how consistent we try to make our process, something unexpected may happen. And you just have to shrug it off. Maybe try to figure out why, so you can refine your process/environment/whatever in the future.
