I am thinking the wyeast 1056 because of the high ABV. I have seen a couple suggestions on candied sugar but I am not familiar with using it or why you would.

As you can tell by now I love a lot of Stone's beers, but I'm not a big dark beer fan myself. Basically, I have nothing for ya.

Looks good but I think Stone uses some dark candy sugar in there brew. Not to say that what you have isn't good.
