I got this from Russki. It's for 5 gallons, for 2.5 gallons you can adjust (hint, divide by 2)...

7.5 lbs of wheat LME
0.5 lbs of Carafoam (steeped)
1 oz of Saaz hops - 60 minutes
1/2 oz of crushed Corriander Seed - 10 minutes before flameout
1/2 oz of sweet Orange Peel - 10 minutes before flameout
S-05 yeast
OG - 1.055
FG - 1.014 (mine was 1.008)
ABV - 5.3%, I hit 6.25%
Cost per 12 pack - $6.26

Heat 1.5 quarts of water to 160 degrees. Steep Carafoam for 30 minutes and remove.
While steeping, begin to heat 2 gallons of water. Add the steeped water to this pot, fill with more water to get to 2.5 gallons total.
When hot but not near boiling, remove from heat and add wheat LME, stirring as you add it. Pour some of the hot water into the LME container, swish it around, to get all of it out.
Heat water to boiling.
Add Saaz hops.
Boil 50 minutes, then add Corriander and Orange Peel.
Boil 10 minutes, remove from heat.
Place in sink full of ice and water, bringing temp down to 100 or so.
Split between two LBKs evenly (each with 1 gallon of refrigerated water in it).
Add cold tap water to bring to 2.5 gallons.
Aerate, check temp. In the mid 60s pitch S-05, 1/2 packet in each LBK (I rehydrated, then aerated wort again after pitching).

Thanks for posting this! To make an AG version, simply replace the wheat extract with 5 pounds of Wheat Malt and 5 pounds of 2-row, and drop the Carafoam - wheat malt has plenty of head-enhancing proteins. Mash for 60 min at 152F.

Gave my son his case yesterday for his birthday, he tried one (as well as a Bewitched Amber). He said it was good, couldn't pin it as a Blue Moon. Called it a good "light beer" - it was 6.25% ABV... When I told him it was Blue Moon he didn't agree. When I tried it side by side it was close, a bit sweeter maybe.

Have to see whether adding more Coriander or more Orange would be good.
