The beer is in the bucket and now I do the waiting thing for the bubbler to start dancing.

I did "slip my chain" once though. I racked the wort into the bucket, aerated it, pitched the yeast, waited about ten minutes, stirred the wort up into a nice froth, put on the cover and bubbler and put the bucket into it's fermentation chamber. Right then I realized I had forgotten to take a gravity reading. :o Oh well. I've made this beer before so I know about where the ABV will end up.

Let me tell ya'. I feel like a kid again! I knew that I missed brewing over the past summer months but I never realized just how much. I went down into the cellar yesterday morning to check on the beer and by shining a flashlight through the bucket I could see that it had krausened like mad over night. If I had made a four gallon batch instead of a three it may have blown the bubbler. The bubbler itself - in which I had put some star-san solution - was full of bubbles and had evidence of foam on it's top.

It's going to be a good beer-making season.
