Hi,
I made a simple blonde ale with some Pilsner malt and then used Lallemand Munuch wheat yeast to ferment it. I think this is a kind of 'steam' beer. Anyway, I normally always use 4 sugar cubes per liter bottle to carbonate (about 2 tsp). This batch is a little over carbonated, not gushers, but like real slow gushing at first and the first glass is nothing but foam. Do wheat yeasts carb better than barley yeasts? Or is this just a fluke. The steam part made me think that maybe wheat yeasts carb more. I was thinking that if I do this again I'd use 3 cubes instead of 4, or 4 if it is a fluke. The beer is great just foamy (burby, too)

That's "Dampfbier" which means steam beer but it's not anything like American steam beer. But yes it's delicious, I made some myself a while back (I've made it 3 times actually).
RE: the carbing, wheat yeast should not carb more in theory then any other yeast - sugar is 100% fermentable no matter the yeast strain - so either the yeast got lazy and didn't quite finish before you bottled and then woke up in the bottle once the sugar got into the mix (like feeding sugar to 3787 will shave a point or two off your FG because it kicks the yeast back into gear), or you got some mild bug in there that ate a bit of extra malt sugar that the yeast didn't get.

I thought you had gone missing on us for a while there Monty so glad to see this post. I am getting on here at choppy intervals myself but I had a cream ale thingy idea pop in my head and thought of your recent adventure right away.

Nah, I'm here, I just got tired of writing up every batch of beer. I'm still messing around with Blondes, but I did slip in a brown, a saison, and a wheat. And some MR beer batches I had left over from before I took off with malt and hops. And as you can see a DampfBier. I am perfecting my process and equipment at this stage. I made a batch this weekend completely off the top of my head without even using BeerSmith. I'm pretty close to automatic now. Not AG but some PM's.
