Coolship - encouraging wild Brett and bacteria?

Post by Sparrow »

Equals Lambic?

So Beach Brewing, about a mile and a half from my front door, just got one of these things, http://beachbrewingcompany.com/what-tim ... ship-time/

They have had great success lately doing various Bretts and sours, lots of different barrel aged beers sourcing different types of wine, bourbon barrels, and now this Coolship.

They certainly are not afraid to experiment :fillup

The guys at Beach Brewing are real nice. I haven't been there myself, but I sent some homebrew to my brother who is stationed in VA Beach, and he decided to take a few bottles to the brewery and let them try it. They gave me a call and told me it was really good, and we talked a bit about the recipe and process, etc. The cool ship idea sounds really interesting, I'm sure it will turn out great!

What is old becomes new again :)

You can find copper versions of those things up on rooftops in some of the small old traditional Belgian breweries. They would let the wort cool overnight and get bugged as such in them.
