If I'm reading correctly....You bottled today and want to drink this weekend? So they will only have one week in the bottle? I don't see anything wrong with only 2 weeks in the fermenter. I've read some commercial craft guys actually ferment some less than that. I also agree that IPA's should be enjoyed younger, but they still need the proper time to carb and condition. I've tried some of mine at 2 weeks in the bottle, although tasty, they are better at the 3 to 4 week in the bottle mark.

That I do understand. They may not be fully carbed by the time I want to drink them, but typically after a week in the bottle it'll have sufficient carbonation that they'll be drinkable (though, like you said, not at their best).

Hmmm, maybe I should try one of my Fresh Squeezed before the two week mark in the bottle for the sake of science.
