maple milk stout

Got to brew again today.

Maple Mik Stout

Steep - 2ozs chocolate wheat, 2ozs crystal 10
2 lbs dark DME
1lbs extra dark DME
10mins UK first gold
2 Oz's Maple extract
8ozs lactose
Saf 04

Thinking about doing this again if it comes out good, and adding raspberries at 2 weeks

Well all my brew gear is packed up and I'm out of action for a while BUT you do have my attention on this one. :)

We've done few stouts so far though not because we dislike them which we do.

Will be bottling this one in a couple of days. The combo of stout and 04 seems to slowed down the fermentation so I giving it a few more days. But the sample was really good tasting.

Waited a little longer to botlle this one. Bottled yesterday sample was good its closer to a porter than stout. May have rework to get more stoutish. I also intentionally carbed it low. We will see in a few weeks how it finished.

A bit of roasted barley would probably put it into stout territory.

The dark extracts tend to have dark munich and medium/dark crystal malts and a bit of black malt for color, but not enough to really get into stout territory. They end up more malty/porterish/English brown ale like - as you have found.

The one exception I know of is Briess Special Dark (not Traditional Dark). It's just 2-row and roasted barley. It's good for irish stouts.

Raspberries sounds good with this.
How's the mouthfeel with the lactose?

It taste good, mouth feel is fine too.
Thanks for the info on the stoutish ingredients. I am going to add some of that and maybe the raspberry too.

This did not come out too good. I think the extract is producing a weird flavor. I going to let this sit in the bottles for a while.

Was the maple extract real or artificial? Artificial flavors in my experience tend to be weird in beer IE the difference between real vanilla extract vs. artificial vanilla extract is good beer vs. meh beer.
