Another Foodie post...well I can't brew darn it
As the temps start to cool I get very excited about cooking. I know most of you guys are into the smoking/BBQ season but I love my soups, stews, Gumbos etc. (and I weigh 103 lbs soaking wet ) anyway BB2 makes up for that so it's all good until our cardiologists find out.
I made BB2 an Oktoberfest meal yesterday with Brats, Spaetzal (sp?), Bavarian potato dumplings and this cabbage in a creamy mustard sauce (which was awesome)
Not mine credit goes to Mr. Food but MAN OH MAN was it good.
Serves: 6
Cooking Time: 20 min
What You'll Need:
1 tablespoon vegetable oil
4 slices bacon, chopped
1 cup chopped onion
1/2 head green cabbage, shredded
1 apple, cored and chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup heavy cream
2 tablespoons whole grain mustard
What To Do:
In a large skillet over medium-high heat, add oil, bacon, and onion and cook 6 to 8 minutes, or until bacon is crisp and onion starts to brown.
Add the cabbage, apple, salt, and pepper and continue cooking 8 to 10 minutes, or until cabbage is wilted. Stir in cream and mustard and cook 2 to 3 minutes, or until heated through.
We enjoyed this with Spaten"s Optimator, a brew that has been on BB2's radar to brew as an ale for quite a while now.
I'll prolly' keep posting this kind of stuff until y'all tell to stop since I can't brew at the moment and am seeking comfort foods.
Very easy and very good having some more tonight with BBQ short ribs.
I got diagnosed with a broken heart valve at the beginning of the month whose surgery I can neither afford nor leave BB2 long enough to endure and recover from so I guess I'm feeling a bit defiant and rebellious.

Broken heart valve?
My prayers and best wishes to you and BB2!
I have a heart murmur that my Dr has an ultrasound done on every year.
He's hunting Insurance money, OR I'll have to have a valve replacement sometime in the future.
Haven't figured out which yet, and he's not letting on!

I like barbecue, that's no secret. But I also like soups, and especially making beef stew in the slow-cooker. Tasty, hearty cold-weather food that can be frozen and heated up in no time. Very convenient for those Friday evenings when I'm in a hurry between getting home from work and leaving for bowling.

@BB2:
I make something similar, but with some Stilton (English blue cheese) added.

I'm gonna be making a beef stew today. But I do mine "HME/steep" style. I use the pre-packaged spice envelopes but them I "steep" my own beef and vegetables in it.

MMM I loves me the blue cheese, never had Stilton before so I'll keep an eye out.mashani wrote:@BB2:

@TT yep sounds like we're in the same boat. Mine is the Mistral Valve, it caves in backwards instead of closing. My doc wants to keep doing the Ultra Sound as well.
They'll let you blow off the surgery for a while but say fix it before you have to replace it because the replacement valves suck.

Sorry to hear about the valve problems. Hope you can get something done about it.
That recipe looks awesome! I have had those but it has been a long time. NO one here likes cabbage, I love it. Soooo, I am forced to do without. I get yelled at when I cook it, SWMBO does not appreciate the smell for some reason... so SWMBO will get her way. When she is traveling, once or twice a year I cook some up, love to make me some kimchee... MMMMMMMMMM

Coming from a strong German household that really looks tasty! Was planning on making some sweet potato gnocchi tonite, but now spatzel might just win out. Made some thick beef stew yesterday to thaw out from the tailgating on Saturday - yup, it was pretty cold.

@FIT I don't know if SWMBO would agree but to me that cabbage is more when boiling than sauteing so maybe you could sneak this in once in a while.
@HB3 your desert plan sounds awesome but I try to stay away from the sweets since BB2 already doesn't have a lap to rest his pint glass on.

When it comes to cabbage, The Auzziechickypoo tosses in onions, bacon, after boiling the cabbage. She cuts it up. The onions and bacon are precooked.
Tonight I made a modified Shepherds Pie.
2 pounds of hamburger
one diced up white onion
1/3 cup of A1
Green Beans
corn
peas
cookied up the hamburger, added the onions, A1, green beans, peas, and corn.
boiled up some potatoes, mashed them, added cheddar to the mix and a wee bit of butter.
toss the meat/veggie mix in a casserole dish, then covered it with the mashed potatoes.
tossed it all in the oven for 15 min, and then pulled it out and served.

Shepherd's Pie has always a favorite for us my mom used to make it all the time.Yankeedag wrote:When it comes to cabbage, The Auzziechickypoo tosses in onions, bacon, after boiling the cabbage. She cuts it up. The onions and bacon are precooked.

I've never had it the peas and corn etc. before. I haven't made it in a while but it seems like we put the potatoes on the bottom, then meat then cheese.
Yum, okay I'm going to make it again and try your version, Thanks for posting it Dag.

I like to put some carrots/parsnips into my Shepherd's Pie as well as the Beans/Corn/Peas. I use a mixture of Worcestershire sauce and Soy sauce instead of A1. I also throw in some thyme.
