I did mine as a 6 gallon split into 2) 3 gal. batches. Mashed at 154
Grain bill started with
10 lbs Two Row Belgian
4.5 lbs Red Wheat
1.25 lbs CaraVienne
.5 lbs Carapils
NIT WIT Strong Belgian
First runnings 1.080 pre boil to this at 10 minutes added
1 lb Begian Candi Sugar Clear
6 oz Honey
.5 oz Corriander Seed
1 oz Sweet Orange Peel @ 5
Hops
1 oz Hallertau @ 60
1 oz Hallertau @ 30
.5 oz Saaz @ 20
11.5 gram SafeAle T-58
Pitched to 1.110 wort

AFTERTHOUGHT BELGIAN PALE ALE
Second running, sparge heated to 170 stirred in and let sit for 15 minutes
Pre boil 1.036 and 4 gallons
Hop Additions
1 oz Hallertau @ 60
1 oz saaz @ 30
11.5 gram SafeAle T-58
Pitched onto 1.043 wort

6 days in @ 63 degrees the Big Beer is @ 1.036 from 1.110 and the Small Beer is @ 1.010 from 1.043. Brought both up out of the basement to finish out at a warmer temp.

Saturday the Big Beer was down to 1.030 and the Small was down to 1.008. Gave the Big Beer a half pound sugar feeding Saturday, too and raised the temp to 72 on the LHBS recommendation.

Mine is a 5 gallon batch. My OG is 1.078. I'm three days in and haven't checked the gravity to see how the beer is coming along.
I didn't make a smaller beer.
