I've been marinating in beer for 30 years, and I assure you it's healthy!
I did make a beer beef stew last week, delicious.
Making beer and stew for the Zombie Apocalypse.
Never mind, there it is.

I've read data (from barbecue/grilling guru Steve Raichlen, no less) that maintains that the amount of carcinogens present in a meal of grilled meat is insignificant.

Still, marinating in beer is not a bad idea as far as flavor and tenderness goes.
