speculate.. wlp400 in an imperial stout?

aside from the obvious answer 'beer' what would you get if you used wlp400 witbier yeast in a Russian imperial stout.. estimated og 1.09?

I just harvested a bunch of yeast from a wit. I can use it for another witbier but started wondering what if?

Hmmm....the only thing that comes to mind is: how would the esters from the witbier yeast go with the dark roasty malts of the stout? I'm not sure really, but they might clash a bit. I guess it would also depend on what temp you would ferment as to what and how much esters you would get from it.

I've made stouts with orange peel and spices for winter consumption. They were good, but I used S-04 in those. But it is possible that the citrus and spices from the WLP400 would work, if that's the kind of vibe you are looking for. But I've not tried it.

I agree that would be the best way to know for sure.

+ Low is 2-5%
* Med-Low is 4-8%
* Med is 5-10%
* Med-High is 8-12%
* High is 10-15%
* Very High is 15% +

alc tolerance from wlp site.. wlp400 is listed as 'medium' -> 5-10%

og of 1.09 fg estimate 1.01 ... abv around 10.8% ... while it likely CAN work it would be pushing the tolerance levels. think i'll use it in my next upcoming wit and use o4 for the stout. what will bother me on the stout is the long aging time of 2 months... I am not patient by nature.
