I think it depends on how quickly you want to tap your first pint.
I'm still getting used to the whole thing, and I'm a bit impatient, but I've been employing the burst carb method, and while the beer is fine after about a week, I've noticed it's much better after two or three weeks. Unfortunately, after two or three weeks, I'm usually only three or four pints away from draining the thing.
Today I kegged the Amber's Amber Lager, and I rocked it at 35 psi for 15 minutes before dropping the pressure down to 12 psi. I'm just going to let it sit like that for three or four months, since I want it to cold lager as much as possible before even drawing the first one. And I'm hoping I can keep production steady so I can have a good flow of draft beer constantly.

Thanks for the update. My Belgian Pale is dry hopping in the fermenter right now. Next week I will fine it and keg it. I'll add my progress to this thread.

I think a lot of it is patience, John. Just as when we first started brewing, and we wanted to try our beer after two weeks, but then learned to give it more time. Since I've got a lager in there now, I know I have to give it time to sit in the cold. My ales are very good after a week in the keg, but much better after two or three weeks.

Thanks Dave. I've decided to carb it somewhat slowly and wait the week. If it's really good I might try to save it for Superbowl. I have some Homegrown Hopped APA ready, and some Fatter Cat PA/IPA coming ready. It would be fun to bring a keg to my buddy's house.
