Usually the corn taste characteristic is from DMS. Which can be reduced by a good rolling boil in an uncovered kettle for 60 minutes, along with good sanitation and a quick cool down of your wort.

Warming up the strike water for a nice, ass kicking red with a target of 9.4ABV. Definitely not looking for a session brew.... hehehehehe. Second go around for my new equipment so I backed the recipe down to 3 gallons, still with 11 pounds of grain, got both fingers and eyes crossed. Wish me luck, going to need it!!

Take a wild guess what I just learned? Go ahead, make it real wild!

OK, after heating up the strike water with lid on (Cajun lectric Turky Fry'r), do not, and I mean DO NOT set the lid onto something cold. How do I know.. well..... 30 minutes worth of cleaning glass up from all over the kitchen. ALL OVER the kitchen. We will probably be cleaning glass up for a long time. I sat the lid down and turned around to give my attention to the eBIAB going on, about 30 seconds later I heard, then felt an explosion. I was covered in glass, head to toes, the damn thing exploded, not a tiny pop, but BOOM, there will be glass all over for a long time. I'm sure glad I had my back to it.

I should have just stayed in bed this morning and continued nursing this damn flu.....

Whoa...no kidding. I would have thought that lid would have been made of tempered glass to prevent that from happening. Glad you didn't get hurt.

Agreed, that could have been much worse. Glad to hear that the glass clean up was the worst of it.

Kegged a batch of Trippel & Seahawk Victory Beer. I'm going to try a rush carb on the Trippel & hopefully there will be enough carb for me to take it to a party Saturday evening... If not, then I'll drink whatever they have at the event.
This is the FG on the Trippel; got quite the attenuation with this Wyeast 1214 Belgian Abbey Ale yeast...

Bottled my Coffee Stout. First attempt at a stout. Sample is very promising. Roasty, chocolatey, with coffee. Just what I was hoping for.

Brewed up another batch of CHAOS IPA as it was a hit the first time around and my Peak's Pike keg is on the verge of kicking. Was a slacker though as planned on seeing a movie with SWMBO (only to find out it was close for renovation) so did a partial mash. Bottling up an old Northern Brown Ale my buddy from Florida sent me as he has no time to brew right now, either tonight or tomorrow depending if I have my procrastination hat on or not when I get home.
