blonde-saison hop choice?

2 lbs dme extra light
1 lb lme wheat
1 lb lme munich

2 oz honey malt
2 oz biscuit malt

.25 oz coriander
.5 oz orange peel

2.5 gal batch, 3.5 gal boil...30min boil
danstar bella saison yeast... ramped up to 74f for the duration of the ferment

I'm looking to make it with .5 tettnanger (30 min) and .5 saaz (15m)... but...

what would I get if I used mosaic and saaz? ie .25 oz mosaic for 30 min and .25 oz saaz for 15? would I get an extra fruity franken saison?

I read some ppl think mosaic tastes like cat pee. opinion? ive never had or worked with mosaic.

same question substitute citra for mosaic hops?

thanks... looking to brew sat or sun if it isn't too windy.

The cat pee thing is present in several hop varieties for some people. Me? I've never really gotten that profile on the nose or the taste, but it might be because I've never tasted cat pee, so what do I know. ;)

Mosaic is described as Citra on steroids in a lot of circles. Similar flavors to me (citrus, maybe some lemon, some pine). I haven't used it, but I've liked beers that I've had that did. The nice thing about saisons for me is that the style is pretty loose on interpretation and usually has fruity flavors (either from the yeast or the hops), so IMHO... go for it. To keep to style, a maybe 20 ibu would be the norm, but it's really up to you...

I don't get cat pee at all with mosaic but can see how some people get it with citra after its older.
Mosaic, to me, almost has a white wine taste though that's a bit strong description.
I would think mosaic would work better with a saison than citra though it is good with many styles of beer.

I'll make saison with just about any hops. I think your combo would make good beer. I'm not so much a fan of Mosiac by itself, but the saaz should help it out. Mosiac by itself to me seems like watered down Simcoe with some berrys on top.
