As the others have said, starting simple before going mad scientist is a great idea. I would make one change to the directions that come with most kits. Ferment for 2-3 weeks (if you don't have a hydrometer), and try to keep the temperature around 65ish degrees. The wort will be warmer than the ambient temp during primary fermentation due to the yeast activity. Follow that up with 3-4 weeks in the bottle at room temp to carb and condition a bit. Then put one in the fridge for a few days to test. If you like it, throw the rest in and go to town. Otherwise give it a couple more weeks and try again. Patience is your friend when brewing, especially with the extract kits.
