Re: Been a LONG Time!
Yeah, keep us in the loop. I'm unfamiliar with these hops strains, and while I don't particularly care for the fruity hops, I'm open to trying new things. I particularly like the Pacific Jade, which I find gives a citrus/pineapple flavor to my PacTiki Pale Ale.

Will do! I actually just had a beer by Victory today called Hop Ranch, which has a hop in it called Azacca. It lent quite a pleasant pineapple flavor and aroma to the beer. I had never heard of that hop before trying this beer

Re: Been a LONG Time!
The brew day went great, and the hops smelled DELICIOUS! I put the beer away in the fermentation chamber and let it sit. I came in to check on it about six hours later to make sure it hadn't gone anywhere, only to find that my fermentation chamber went on the fritz and cooled all the way down to 44 degrees! I shut it off, and check the temp of the beer, which ended up being 51F. Will this have an effect on the yeasts ability to ferment this beer? Or would warming it back up to around 65F have no effect on it?

I agree, just warm it back up. You just have the yeast little rest. It will be fine.jimjohson wrote:just warm it up, your ok

Re: Been a LONG Time!
So fermentation finally kicked in around early Tuesday, and got very agressive. It has slowed down dramatically so I went ahead and checked the gravity. It is down to 1.014 already, so I am going to let it sit another day, and then begin dry hopping on Monday, with hopes of bottling on Thursday or Friday. This thing smells incredible already without the dry hops, and the taste is unlike any IPA I've had. Distinct tangerine flavors, with hints of lemon and other fruity/citrusy aromas I can't quite pick out. It truly tastes as if there has been additions of fruit into this beer, incredible that these hops can do that! With that being said, I have found an appropriate name for the beer. Since it seems as though fruit is added to this beer from aroma and taste, but none has been, I shall call it Fruit Fallacy IPA

Re: Been a LONG Time!
Well I bottled yesterday, the beer smelled fantastic. A pungent melon aroma comes through, and the taste is tangerine/citrus with a nice light malt backbone and the color is a cool bright orange/yellow mix. Forgot to take pictures but I will post one when I do the first pour in the coming weeks! Very excited about this beer
