#89: Cidre Normande (take 2)

My favorite 5 minute brewday. We drank my last bottle of cider at the Nashville meet-up, so time to make another batch. I didn't take any readings or measure the honey this time... I had a bottle of honey that was maybe 1/4 full, so I'm thinking it was 4oz or so. Differences from last time are that I used apple cider this time instead of Whole Foods apple juice, I added more acid blend (1 tsp this time, which is a lot more than last time), and I used Cooper's/Mr. Beer yeast (last time was champagne yeast). Basically pour off some of the cider, mix with the acid blend and honey and bring to boil. Cool and combine in a sanitized one-gallon fermenter with the rest of the cider. Drop yeast. Easy peasy...

Now we wait... I'll likely ferment in the primary for 2-3 weeks, and then transfer into a secondary off of the must for a few months or more. I think it really hit it's stride at the 1.5 to 2 year mark last time.

My wife has asked me about making both wine and cider and I might be interested in doing so this summer.
Seems easy and well worth the experience.

Damn... kinda forgot about this one. Seven weeks in primary at this point. Debating on transferring off of the must and leaving for another few months in secondary or just bottling this weekend. I may get a can o' berries and secondary with that. Hmm... yeah, I think I'll do that...

Revisiting this... I still haven't bottled this sucker. It's been in the secondary since the last post in April, where I had it with pureed mixed berries (rasp/straw/blue, I think). Being home this week with the wife, I likely will try to bottle in the next few days.

Sounds tasty. Looking forward to how this cider develops. I traditionally have gone the Graff route and I enjoy that quite a lot. I have done the HBC cider and it was pretty good after a year of conditioning.

Have you tried Nong Cider? It rocks, best I've ever had/made. Dag hit this one on the head just right, it's about as perfect a cider I've ever had. Very simple to make, mine come out 10~12% and still has awesome flavor! IMHO

Bottled this a few weeks ago, and decided to open one. Will likely let the others go until Christmas break or further, but this is pretty darn good now. Subtle berry (mostly strawberry, I think) along with a crisp apple. Me likey... Looking forward to future cider making...
