Happy St. Patty's Day - we are lapsing on the diet

Took a break from catching up for a dinner break. Since I am able to eat again we are cheating on the diet a bit today.

Slow roasted a corned beef for sandwiches; piled with melted Dubliner Stout cheese on seeded rye bread. Served with seared red onions, garden potato salad and spicy mustard.
Calories baby - bring it on. :banana:

Don't think BB2 will be losing weight as fast as I'll be putting it on. :whistle:

We celebrate tomorrow, the local parade, then friends over for corned beef and cabbage. And homebrew.

Crikey, that looks good! Being a New Yorker, a warm corned beef sandwich is heaven on earth for me!

That also reminds me that BBQ season is coming, and my brother smokes a mean brisket. I've never attempted it, but I may this summer. We've all got our specialties in my family. I do ribs, my brother does brisket, our nephew does pulled pork, we all do chicken (because chicken is simple).

It's amazing that I don't weigh even more than I do already!

I'm looking into starting smoking meat this season. I ordered a book, I'll ask here when I get confused.

John, if you only get one book about barbecue, get Steven Raichlen's "Barbecue Bible." There are good recipes in there, but more important, there are tips on how to cook low and slow in a smoker.

What meat do you prefer? I would be glad to ask my local experts and give you leg up before the season.

Thanks Dave, but I already ordered Smoking Meat by Jeff Phillips. I've only made two choices so far: To study the basics, and use equipment I already own. That would be a Weber gas grill and a small round charcoal grill.
