Storing Beer for extended lengths.
Well,
I have some special ass beer I managed to procure.
I want to save 2 bottles of it for at least a year if not longer, but I live in South Florida.
Ideally, beer should be stored in a cellar, upright and dark, around 55F.
Uhh...that's not possible in my scenario. I have a closet that stays around 80F.
Does anyone here have the same issue, or have an idea of whether it's a big deal or anything?

Store it in your refridgerator. That actually keeps it the longest.

My beers are all stored at around 66F. I keep them in a closet in my man cave where they will never be exposed to light. I have had them last up to 2 years that way with no issues.

I kept mine in the beer beer closet...at ambient temp. This is Texas...cold is 75*...it ain't been cold for a long time.

Same issue here in Central Texas, all beer stored upright in a closet so we asked the local brew club guys and they said we were okay in the eighties.
It' not ideal but as home brewers there are some things we can't control without throwing a ton of money at it.
If there are just a few in your case what about the fridge or are you looking for extended conditioning time?

I have ample space to store it in my basement, which hits a max of 72 in summer and is around 58 - 60 in winter. You pay shipping both ways, I keep 10% of the brews...

I have some slightly modified MB recipes that have kept for about a year (not big beers). Temp fluctuates between 65-75F depending on the season. I keep moving a sixer at a time into the fridge to tide me over til my next batch is ready (don't have the heart to pour them out). They taste fine really. Can't say that they are much different than before.
Fermenting: Bucket 1 - Fresh Squeezed IPA; Bucket 2 - Empty
Kegged: Keg 1 - Irish Red; Keg 2 - Cream Ale; Keg 3 - Amber Ale; Keg 4 - APA; Keg 5 - Empty; Keg 6 - Empty; Keg 7 - Empty

I have a small, dorm fridge with a Johnson controller to keep beers that I want to store for awhile at about 55 degrees.
So, send them to me and I will store them for ya!

Yep. Thought if I just forgot about them for a while they might get better and the "twang" might go away. While the twang isn't quite as prevalent, it is definitely still there.Holy crap that taste isn't going to go away after a year? On the upside, the sediment is very compact in the bottles, and they pour very clear...

I keep mine in a corner of my basement which goes from 56-72 depending on time of year. Stuff that is > 1 year old is still good.

You might look at discount warehouses for a wine cooler. Somebody I know just got what appears to be a really nice one for $25 because it was the last model at ABC Warehouse and they weren't carrying it anymore.jivex5k wrote:Hmmm. I wouldn't want to burden you with my beers though, I'm too courteous for that.
You could also look for a minifridge. I got mine a few years ago in October after all the back to school sales. I paid less than $40 for 2 very large minifridges. They can't go quite as cold as I like for fermenting lagers during the summer but they would work great to hold something to the mid 60s low 70s and are less than 100 watts.
