Heating up the mash water for Kealia's Lager Miser IPL. It's the first time starting with distilled water and adding back gypsum, epsom salt and lactic acid.

Thursday I brewed a 10 gallon batch of my Screwy Witz Witbier on what's so far been the hottest day of the year up here. I must say I'm really in the happy zone whenever I get to spend the entire day in the brewroom even in the 80+ degree heat. This time what I did differently was to add the zest of 8 organically grown oranges instead of using dried bitter orange peels as I had been doing for previous batches. The hydrometer sample I tasted had a very fresh orange citrus aroma and flavor that I felt stood out more than past batches too.
I underpitched using 2 vials of WLP400 Begian Witbier yeast instead of making a 400 billion cell starter as I had last time I brewed this. Anyhow at 67F it was two and a half days before there was any activity in the airlock but this Belgian strain is one I find very interesting to work with because I think it behaves so different than most other yeast I've used.

Just Kegged 3 gallons and Bottled 2 Gallons of "WhataRye Saison"
Sample tasted GREAT
Nice lemon flavor from Sorachi Ace
Also has some Bitter Orange Peal
A little high ABV at 8.1%
miscalculated the attenuation
In a few minutes I will Keg 5 gallons of "AnotherRye" Saison
Very similar but at 5.1%
And a little later I will Keg 5 Gallons of "Strawberry Blonde" Ale

My co brewer who was lagering our kolsch kegged it yesterday. Didn't get a chance to taste it yet but he said it was very crisp and tasty. Gonna give it a week on the CO2 and sample next week. This was my recipe I put together a few years back and modified based on competition feedback. It will be entered in to our brew club competition where the winner gets to brew it at the local tap room and have it on tap. Looking forward to trying it.
