Rehearsal dinner saison

I intended to bottle the saison last night. I did not; I was just too tired. But I had checked the final gravity, and it was down near 1.000. Very satisfying. The sample I tasted was fruity and tart, with a bit of pepper in there, too. Golden color and hazy appearance. Alcohol is 8%, but not "hot" or astringent. I'm very pleased with the way this came out. I think it's pretty true to style, and will complement the menu well. A darn good beer all around.

I'll bottle it this morning and just keep it in the cellar until about a week before the dinner, when I'll put it in cold conditioning. If the Pale Ale and the Groomsman's Pride turn out this well, I'll be pleased, indeed, and will feel I made a real contribution to this whole shindig.
