This is what I will be brewing Sat. Morning http://www.midwestsupplies.com/drunken- ... n-kit.html I'm going to wonder about this one but have to try it because I like the name and like Saison's. It is SG heavy, 1.088 and am using 11g Belle and I'm going to rehydrate. It's a lot like the best beer I've made Funky Farmhouse but that started at 1.067 and finished at 1.005. This says FG 1.010. Yea.... I know and seen the FG go way lower then that. But what I'm wondering if the Belle can handle that much. That yeast will eat most everything but that will be the highest SG I've used it on so far, really like that yeast and have used it quite a few times. I'm game for the try............

I'm pretty sure Belle will chew right thru that wort! The one that can tell you for sure would be Mashani.

Bella will easily handle anything up to around 12% as far as I know. I think it's the same yeast as Wyeast 3711, it tastes and acts exactly the same in my experience, and I know that yeast does 12%. If you want to be sure pitch 2 packs, but you probably don't need it. It doesn't floc out easily, so it's not going to get stuck or need rousing. It's just gonna chew until it can't chew anymore.

That recipe looks like an "almost copy" of Northern Brewers "Storm the Bastille" kit, which is a 1.088 kit. Mine finished at 1.009. I might have slightly overfilled when I topped up though.

I think if using really fresh extract IE MoreBeer Pils, or if doing it AG with a mash in the 147-148 range or a step mash, you could get it to go lower then 1.010. I've had 1.06 beers go below 0, with 100% MoreBeer pils. You could sub some more sugar for some of the pils if you want to be really sure it gets lower. But that's just insanity :)

That is the exact same kit that Northern Brewer sells. Exactly the same ingredients, everything the same brand, and all in the same packaging. I mean it is *identical*. (I know because I bought that kit twice - I didn't brew that beer straight up with the first one... I got it 20% off and used it's ingredients to make 4 or 5 other lower abv. batches of beer with some extra stuff I had around here. IE the "Easy French Blonde" I posted in basic recipes was one of those beers. (and it is awesome). And also the Kilt Skiers Bier de Mars (which is quite good too). And Steamed Nelson (it's yummy too) - I think I used the Nelson hops from that kit in it. And other stuff. Yes, I totally franken brewed a recipe kit LOL.

Soi now, I wonder - are Midwest and Northern owned by the same company now, and simply two different "brands"?

EDIT: FWIW, Northern has a 20% off sale this weekend for a single item, so you can get one of those kits from them with the equivalent of free shipping and some discount still, since it's a huge kit. If anyone is interested. If you don't want an 11% beer, you can easily use that kit to make 2 or 3 "more normal" beers with just a little bit of extra ingredients, so it becomes cost effective way to get a bunch of hops and extract and a bag full of easy to use specialty grains for a + steep batch. They have an AG kit, but it's only a few bucks less then the extract kit, so at least for me not worth the trouble vs. time.

I don't know but that is strange, either they are together or somebody is copying somebody...
I don't know quite yet what my SG will be, I'm still cooling down I did water it down a little, I think it will come in around 1.080.
That would be a good deal with 20% off, I paid the same at Midwest as Northern $65...........The most I've ever spent on 5 gal batch....

I decided to pull the trigger that first time because of the 7oz of hops and all the extract, it was a good deal at 20% off to use in multiple recipes, and the Armais hops are high enough AA to do short boil Belgians with (and perfect for them flavor wise).

Then curiosity got the best of me the second time they had 20% off offer. But I haven't cracked any of the real bottles yet, just a small trub bottle that I drank early... I'm letting the rest of it age - so I don't know what to tell you to expect as the true final result... Except that it's going to get me wasted if I'm not careful. It did taste great out of the fermenter considering how potent it is. The trub bottle was small sample, but what little I had was great.

Crap.. I really missed calculated on this. I got 1.090 @ 68 deg. And I added about .250 more water.
