FWIW, that beer is only 35 IBUs of bittering. But it has Chinook, Ahtanum, Amarillo, Cascade, Simcoe, and Nelson Sauvin hops. Many of those are up there in the AA range. In any quantity of note, you'd go over 35 IBUs even with a short boil.

So it has to be either just a tiny bittering charge and everything else thrown in at T-20 or > with the vast majority of it T-10 or >, and then no whirlpool with the hops still in, as that would push it over 35IBUs if they used enough hops to make it seem "IPA like" flavor wise. Unless virtually everything was a flameout addition.

I'd make something similar, but with more like 50-60 IBUs of bittering and all the hops added T-20 or > with a hot hop stand with the lid on to get to my IBU target range. Probably 100% Maris Otter or Golden Promise. Nottingham yeast. That would taste good to me and have good aroma.

A beer named Sue, well a clone of a beer named Sue. Thanks Inkleg. This is pretty good. But I'm not getting much, if any, of the smoked malt in this. Other than that, it drinks really nice. Roasty and malty! It's a nice beer to sip on while relaxing from a busy day.

There was 2 pounds of Cherry Smoked malt it the recipe and was really noticeable when first carbed. Like your beer it's there, but hard to pick it out now. I'll have to look into this because I'm working off a fairly accurate recipe. ;)
Glad you liked it and that the bottle held together better than the last one.

On my second Finally Graduated, Mom and Dad Are Over The Moon BM clone w. a drop of orange oil in it. SWMBO had a Frutti's Beer, Keep Your Stinkin' Paws Off fruit wheat with apricot, and our son had a Jump Over The White House Fence Honey Porter a d a Ring Your Bell Brown ale.

Interesting that the bottle of Sue you sent me had the smoke... but I drank it pretty much the day after you bottled it, so maybe it was just young enough. I have a 2012 bottle of Yazoo Sue in the cellar that I need to try at some point. I wonder how the smoke held up in that...

One of the things I regret not being able to share with the Nashville meetup crew was the wonderment that is Blackberry Farms Brewery. A nano that was started as a private brewery for the ultra posh 9200 acre Blackberry Farms Luxury Hotel and Resort in the foothills of the Smokies in Walland, TN, and then became an ultra-rare exclusive #whalez beer that everyone around here tried to snag by hook or crook, the Blackberry Farms Brewery pumps out beautiful and delicate small batch saisons and Belgians. Unfortunately, when we met up, their beers were only available at the Farm and at a couple expensive restaurants in Nashville who had cut a deal with them. In the last few months, however, they have started a small distro to Whole Foods and a few beer/wine stores here in the area, so I've been able to snag a bottle here and there.

This is the second bottle they've released to this distro (with the first being their Classic Saison). This is the Summer Saison seasonal:

Malts: 100% floor malted Pilsner and character malts
Hops: Australian Summer, Citra
Yeast: Classic Saison
Citra shines in this one. You get the yeasty saison bit, and some pepper, but it really comes off as a Belgian IPA without the bitter... it just drops off on the back end. Super balanced and super good. Very bright, and dry yet not bitter.

For the record, the other regrets (you all need to come for a week next time):

- Corsair Distillery and Brewery (taproom, brewery/distillery, and grain micro-maltster... very cool to visit)
- Calfkiller brewery
- Black Abbey brewery
- TN Brew Works
- Arrington Vineyards

Shared some Frutti's Beer, Keep Your Stinkin' Paws Off fruit wheat and Finally Graduated, Mom and Dad Are Over The Moon Blue Moon clone with some friends. Flavors included strawberry, apricot, raspberry, and cherry, and orange with the BM.
