Fresh hop ale

0.5 lbs toasted malt
0.75 lbs 40L British crystal
0.25 lbs special B
3.3 lbs Northwest gold malt extract syrup
2.25 lbs dry amber spray malt

0.5 ounce chinook - bitter
0.75 ounce cascade - flavor
3 ounces wet williamette - aroma

Wyeast 1028 - London ale

You all are great. I'm on the same page as you folks. I'll see if he can dry some out to use for flavor. Then use wet for aroma and "dry" hopping. I've got what I feel is a solid APA recipe, so it should give room for the hops to shine. Still waiting on what variety he has.

I believe he was surprised he got some production this year and is excited to see beer produced. Don't think he's too picky on what I do.

What do you all think about going like west coast red, but not an IPA? Think a more complicated malt bill would be too much?
