So this was a long experiment. Standard lager, had a few days D-Rest, crashed it again. Left it after initial fermentation for a month @38 degrees. Crashed to freezing, after about 2hrs got about ~70% or so liquid out - noticed some frozen goodness as the sludge was not pure water. Honestly this beer didn't come out as dark as I thought it would but good. Once siphoned off ice let sit in secondary (thirdary?) for 4 months, bottled, been sitting since (1 year now). After doing the math, looks about 9.5% ABV or so. Not sure if notes are off, supposed to have an OG of 1.100, missed that apparantly. Also - when it comes to the yeast - I ordered the Wyeast Smack Pack but it was inflated when I got it. Being in a remote area with no LHBS and nothing to make a starter with (thanks military movers for breaking all of that!), I double pitched it with dry yeast I had on hand. Not the ideal situation, I know.
