I just put an ounce of oak chips in a mason jar with a pint of Kentucky Deluxe whiskey (cheapest I could find). I will pour all that in the bucket after primary fermentation is done.

Are you using 2 packs of yeast or just double listed it? I don't think you need more than 1.
I bought some oak chips over a year ago and never used them and just threw them away as I was afraid they lost much of their oak-ness. I've read that you don't need to leave them in longer than just a few days so you may want to start taste testing after day 3.

I always double pitch if my OG goes over 1.070.
How you soak your chips depends on how much you use. If I were using 2 oz a couple days would be plenty. But I cant fit 16 oz of whiskey in the jar with 2 oz of oak so I like soaking at least a week. This is my third batch of this stuff. First 2 batches were exactly how I wanted them.
