I get excited about every beer I brew and then I pick it apart like a big bugger!
I was getting tired of 001 and have enjoyed what 007 does in IPA's and Pales so I'm hoping the esters I get from it go well with the Swaen malt.

This brew is long done! It's odd because with about 15 minutes left I check the gravity with my refractometer and it was 1.065....WAY above the 1.057 projected but when complete, it came in at 1.060. Not sure why there was that discrepancy.
Since Swaen is not in Beersmith, I just guestimated the info based on their website so that could account for the higher gravity. I was looking for a heavy pale and not a light IPA so I think I suceeded.

The twin and I enjoyed exceptional weather today. And a few good games to watch as well. If every Sunday could be like this I don't think I would need to retire. Not that I can anyway.

Kegged this today but didn't get a taste but it sure smelled really good. I have to believe it the Nelson Sauvin I'm sniffing.
It went to the keg faster than most of my beers but as I only have a few pours of Hippity Hoppity left and NO MORE IN THE KEGERATOR :o :o :o I have to get brewing soon. Just don't have enough free time right now to keep up.

Kicked the crappy saison this weekend, the Simply Simarillo was given 2 gallons for the floor to drink (well, the floor and the mop fought over it) and I have a few pours left of Hippity Hoppity.
Just put this pale in yesterday as well as brewed Simarillo again yesterday. So, my math tells me that Hippity will kick in a few days and leave a spot.
Looks like it's time for my black IPA but I'm going to put some rye in it this time.

I was wondering if the Swaen and Golden Promise was going to overpower some of the hops. I did keg this in 2 weeks instead of 3 and even with a 48 cold crash, it was still a bit cloudy so it'll likely take a week to a week and a half to really be enjoyable. But you know I'll sneak a taste this weekend.

A small, first pour (no pics) after only 4 days on gas. First, this didn't go 3 weeks as I normally do, just 2. It's cloudy and needs at least another week. Don't you hate how kegs still need 2 weeks to be good?
Anyway, this one was pretty different than many of my pales because I used 3 of the 4 grains I've never used before. And it's hard to tell this early how NS and Mosaic stand out but I can say the nose is full of grapefruit. I know Nugget can do that but it is a bit more bitter up front than I planned and was hoping FWH would help.
But, it's not bad, gonna get better and it's gonna get drunk. I really shouldn't even post about it this early but since I like to bore everyone, why not?

Of course I'm still testing the pours while this beer carbs and conditions so 5 days later, another taste. There's still some cloudiness and yeast in suspension but it's clearing however, so far, it's underwhelming and that's why I like to try these so early. So in a week I can say how much I like it.
But, there's so many things that make this beer different from me from the malts I've never used nor know what to expect to the NS hops which I've used sparingly in the past. I'm not sure what to expect because it could just be the Mosaic which I'm only a fan of in small amounts. What I do like about it at this point, is that it is different. But I am sure that my water is the thing that makes me able to pick any beer I've brewed out of a million others. I'm sure we can all say the same but, I am on the hunt for trying a few different things but the same way........that makes sense to me.
